~up to my eyeballs in zucchini~

seriously.
We started baking at 9 am and as of now, 4:30,
we are still baking,
and I have only gone through 2 of the 3 zucchini's!
So far we have made 2 pans of zucchini quiche.....
a dozen zucchini muffins...........

2 large pans of zucchini brownies with frosting.........

and 4 loaves of bread.
And, we only had to go to the grocery store once
in the middle of all this for more flour and cinnamon!
The brownies are soooo good, and guess what?
My non veggie eaters love them!
We, or shall I say I, also shredded
12 cups of zucchini, and vacuum packed it for future use.
I also individually wrapped the brownies and slices of bread, vacuum packed them, and am freezing them for later.
I will be so glad I did it when school starts!
It will make making lunches a breeze!

Those muffins look heavenly. I've never had zucchini brownies before. I'm going ot look online for the recipe. Very cool idea.

The food looks sooo yummy!!! I think I'm going to have to make some zucchini brownies-it will take some of the guilt out of eating them!!

Oh Melanie! You have inspired me! Tomorrow is a baking day! I am also up to my ears in zucchini from my garden. It was cool and overcast today here in Walla Walla and baking sounds like a great way to spend Friday. Thanks for all yoru inspiration!

Zucchini....it's make me wish I had a garden, but the thought of one more thing to keep up with exhausts me! I remember the day my sister would make zucchini bread loved loved it. Maybe I should find a farmers market here in Houston to visit. Thanks for your blog!
