~what's for dinner~

My husband recently went tuna fishing and brought a ton of it home to freeze.
Last night we had tuna steaks smoked on our traeger grill
with red potatoes, green beans, rolls, and penne pasta.
We had a ton of leftovers so for dinner tonight we are having tuna sandwiches! Although I used fresh tuna steaks, you can also substitute canned tuna fish.
~here is what you will need to make 4 sandwiches~
12 ounces good-quality tuna
2 stalks celery, halved lengthwise and thinly sliced
1 apple, such as McIntosh or Gala, peeled, cored, and cut into 1/4-inch pieces
3 tablespoons light mayonnaise, preferably made with olive oil
2 tablespoons freshly chopped basil leaves
1 tablespoon freshly squeezed lemon juice
salt and freshly ground pepper
8 slices good hearty bread
I am serving this with apple slices and homemade soup, perfect for this rainy grey day!

Melaine, your tuna sandwich dinner sure beat out the arctic cod sandwich I had from Red Robin tonight, LOL!!! You know this is weird but sometimes I physically crave tuna sandwiches!!? I think it must be the protein or something....

I wish I could read German so that I could read Rilke in his original translation. Still, I love my side-by-side translated copy of The Book of Images and pull it out whenever I need inspirational thought.
as for my favorite poets, I named my blog from an Emily Dickinson poem, so I suppose my favorite is a bit obvious, no?
