~mom's blueberry lemon bread~
1/3 cup butter
3/4 cup sugar
3 tablespoons fresh lemon juice
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt
1/2 cup milk
2 tablespoons grated lemon peel
1 cup fresh blueberries
for the glaze
1 cup powdered sugar
about 2-3 tablespoons fresh squeezed lemon juice
Grease and flour bread pan. Combine the butter, sugar, eggs, and lemon juice. In a separate bowl, combine flour, baking powder, and salt.
Add the flour mixture to the egg mixture, alternating with the milk. Do not over stir. Gently fold in the blueberries and lemon peel.
Bake at 350 for approx. 1 hour.
Pour glaze over warm bread.
