~fall baking~{3 zucchini recipes}

Yep, it's almost fall, and that puts me in the baking mood.
I have plenty of zucchini's that need to be put to good use, so here are a few things I made this week:


1. ROASTED VEGGIES


2. HEARTY ZUCCHINI MUFFINS


3. ZUCCHINI BREAD

What temp do you cook the veggies and how long for?

I would also like measurements for how much oil, ect...

I believe it says roast at 450 for 35-40 min but approx measurements per amount of veggies for the dressing would be great. i.e. 1/2 tsp oil for 4 servings, etc.

I have made this a few times but first time I made it on Thanksgiving. My very picky family and friends LOVED it!
