BBQ fajita roll ups


These BBQ steak fajita roll ups are the perfect low carb dinner for the summer!
They are full of flavor, full of nutrition, and super yummy.

BBQ Steak Fajita Roll Ups

prep time: 30 Mcook time: 15 Mtotal time: 45 M

ingredients:

  • 1.5 pounds flank steak
  • 1 red bell pepper
  • 1 yellow bell pepper
  • small bunch of asparagus
  • 1 small red onion 
  • fajita seasoning mix
  • toothpicks

instructions:

How to cook BBQ Steak Fajita Roll Ups

  1. Pound flank steak down to as thin as possible using a meat tenderizer. Cut into strips and sprinkle with fajita seasoning on both sides. Set aside.
  2. Wash and chop the bell peppers into thin strips. 
  3. Chop the red onion into thin slices.
  4. Trim the stalks off the asparagus, cutting it to the same length as the peppers.
  5. Char all the veggies over the stove on med-high.
  6. Lay a strip of steak down and place veggies in the center. Roll the meat around the veggies and secure with a toothpick.
  7. BBQ, flipping once. 
  8. Serve with chips and salsa.
