Today I have a super easy recipe for you to whip up for all those fall gatherings. It's warm, tasty, and gooey, and you are going to love it. I hope you love this tomato and goat cheese dip as much as we do!
I made this in a cast iron pan, which I recommend. If you don't have one, don't worry, it isn't necessary.
Heat your pan over medium heat on your stove top.
Add 4 Tbsp. of good olive oil.
Stir in 6 cloves garlic, 1 tsp. dried basil, 1 tsp. dried oregano, & one tsp. salt.
Saute for about 45 seconds or until garlic is fragrant but not browned.
Stir in two 28 ounce cans diced tomatoes. I like using one plain, and one fire roasted for a milk kick.
Heat at a simmer for about 15 minutes until the sauce starts to thicken. Remove from the heat.
If you are using a cast iron pan, cover the top with slices of goat cheese. If you aren't, transfer the tomato mixture to an oven proof baking dish, then cover the top in sliced goat cheese.
Bake for approx. 15 minutes on 375, then broil on high for approx. 5 minutes, until the goat cheese is golden brown.
Serve warm with crackers and or crostini.
