lightened up lemon pound cake

Spring is in the air!

Today I have a really easy dessert recipe for you to try. Lemon lovers take note, this is a good one!




Not only is it delicious and pretty to look at, it is super simple to make with only a few ingredients!






Lightened up lemon pound cake

Ingredients:

  • Cake Ingredientss
  • 1 sugar-free lemon cake mix
  • 1 small package sugar free lemon pudding mix
  • 4 eggs
  • ¾ cup nonfat Greek yogurt
  • ¾ cup lemon juice
  • ¼ cup water
  • Icing Ingredients
  • 2 Tablespoons lemon juice
  • 1 cup Swerve powdered sugar

Instructions:

How to cook Lightened up lemon pound cake

  1. Cake
  2. Preheat oven to 350*F. Spray the inside of the cake or bundt pan with Pam or other 0 point spray.
  3. Combine cake mix, pudding mix, eggs, yogurt, 3/4 cup lemon juice and ¼ cup water. Whisk until combined. Do not overbeat.
  4. Pour batter into cake pan and bake according to cake package instructions.
  5. Icing
  6. Combine powdered sugar, and 2 Tablespoons lemon juice. Stir until all ingredients are combined. Use remaining lemon juice to bring to a consistency that will allow you to drizzle the glaze over the cooled cake. After the cake has cooled, drizzle the glaze over the cake.

I added a bit of lemon zest to the top and then cut a couple slices of lemon for garnish.
