pumpkin pie bars

 I have the most easy and delicious recipe for you all today!


Next time you are at Trader Joes pick up a jar of this pumpkin butter.


You are going to create a cookie/crumb like base and topping to cook along with the ooey gooey pumpkin butter.

The combination of the two result in a pumpkin pie like cookie bar that everyone will be coming back for.

This would be a great dessert for Thanksgiving, so be sure to pin any of these images so you can find it next month!


Your house will smell like Fall exploded and you won't want to wait until these cool to eat them.

But try to resist the temptation because they are worth the wait.



I bet you could double the recipe and cook it on a sheet pan. 

I think I will try that next time I make them.



Once completely cooled you can slice them into bars for everyone to enjoy.



Pumpkin Pie Bars

Ingredients

  • FOR THE CRUST AND TOPPING
  • 1 1/2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, chilled and cubed
  • 1 egg
  • FOR THE FILLING
  • 10 ounces  pumpkin butter

Instructions

  1. Preheat oven to 375 degrees.
  2. Lightly spray an 8 by 8 inch baking dish with nonstick cooking spray.
  3. In a medium bowl mix flour, sugar, baking powder, and salt. Cut in butter with a pastry cutter or two forks. When the butter is cut into small pea sized flour coated crumbs, add the egg and stir to bring the dough together. Use clean hands if needed. The dough will be crumbly.
  4. Divide the dough in half and press one half into the bottom of the prepared pan.
  5. Spread the pumpkin butter in an even layer over the dough, then crumble the remaining dough on top.
  6. I get my pumpkin butter at Trader Joes.
  7. Bake for 25 minutes or until the top is light golden brown. Cool completely and then cut into bars.
