spinach & sausage breakfast casserole

Breakfast casseroles are made frequently in our house. I think it's a great way to get your protein and veggies all in one dish, and the different combinations are endless!

We have breakfast casseroles for dinner sometimes too, and they are always so good re-heated the next day.

Christmas brunch is a great time for an egg dish like this too. The cherry tomatoes and the spinach give it those Christmas colors!

Today I want to share with you one of our family favorites, but feel free to tweak the recipe to your liking!
